CHECK. IT. OUT!!! I have a new blog design!! {Can you tell I am a tad bit excited about it?} Lena over at Simply Fabulous Blogger Templates helped me customize one of her lovely premade templates and then she installed it for me. She was so easy to work with...and fast! I have really been struggling for some time over my blog design. I wanted to hire someone to design the whole thing, but I didn't want to shell out the moola. And even if I did shell it out, I wasn't really clear on what I wanted. Something cute. That's about all I could really visualize.

So if that wasn't enough to make this a fabulous Friday, I ATE THE BEST SANDWICH OF MY ENTIRE LIFE TODAY. True Story. Seeing as how it is Lent and I am Catholic, I do not eat meat on Fridays. My Mom and I were trying to figure out what to have for dinner when she handed me a takeout menu for a local sandwich shop. I glanced over it for a minute before I saw this:
Pimento Cheese Panini - Homemade with a blend of three cheeses and fire roasted red peppers.
Shut the front door. As any good, self-respecting Southerner, I love a good pimento cheese sandwich. But until today, I had never had a hot grilled pimento cheese panini. I cannot even describe to you the deliciousness that was this sandwich. Let me channel my inner Giada deLaurentis:
Warm, gooey, cheesy filling with a hint of spice from the peppers...all inside two thick slices of grilled crusty bread.
Be still my Southern heart. I fell in love at first bite. Pimento Cheese Panini, you had me at hello.
There's nothing like a new blog design and a good sandwich to bring me out of my Pour Your Heart Out funk. Thank you all for your kind comments yesterday.

As a fellow southerner, I also love me a pimento cheese sandwich. I had read about grilled ones and I made one myself a few weeks ago. Yum! I like mine with a little jalapeño in it!
